Winter Peach Cobbler
Peach cobbler is a staple in my kitchen in the summer months. I know y'all have heard me boast time and time again about the joy of a South Carolina peach and while I love using fresh peaches in the summer and peaches that I've frozen from the summer in other seasons, I know not everyone has a stash of fresh fruit tucked away.
That’s where this recipe, made with canned peaches, comes in handy! It’s the perfect way to enjoy the flavors of summer during the colder months when fresh fruit isn’t in season. My niece Morgan swears by using fresh peaches for her cobbler, but I can tell you, canned peaches work just as well for this dish. This Winter Peach Cobbler is a crowd-pleaser for family dinners, easy enough for a weeknight, and always best served warm with a scoop of vanilla ice cream.
It’s simple, comforting, and full of rich, buttery goodness.
Prep Time: 10 minutes
Bake Time: 40-45 minutes
Cool Time: 10-15 minutes
Total Time: Approximately 1 hour 10 minutes
Ingredients:
For the Filling:
2 (15-ounce) cans sliced peaches in syrup (do not drain)
1 tsp ground cinnamon
½ tsp ground nutmeg
1 tsp vanilla extract
½ cup granulated sugar (optional, depending on sweetness of peaches)
For the Batter:
1 cup all-purpose flour
1 cup granulated sugar
1 tsp baking powder
¼ tsp salt
¾ cup whole milk
½ cup (1 stick) unsalted butter, melted
For the Topping:
2 tbsp granulated sugar (for sprinkling)
You will also need:
Medium saucepan
Mixing bowl
9x13” baking dish
Instructions:
Preheat Oven: Preheat your oven to 350°F.
Prepare the Filling: In a medium saucepan, combine the canned peaches (with syrup), cinnamon, nutmeg, vanilla extract, and sugar (if needed). Heat over medium heat until the mixture begins to simmer. Stir well and set aside.
Make the Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until the batter is smooth.
Assemble the Cobbler: Pour the melted butter into a 9x13-inch baking dish, tilting the dish to ensure the butter coats the bottom evenly. Pour the batter over the butter, but do not stir. Spoon the peach mixture evenly over the batter, including the syrup. Do not mix; the batter will rise around the peaches as it bakes.
Add the Sugar Topping: Sprinkle the top with 2 tablespoons of sugar for a lightly caramelized crust.
Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the batter is set.
Cool and Serve: Allow the cobbler to cool for 10-15 minutes before serving. It’s best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream.
