Apple Walnut Salad

It’s too hot to grow apples in South Carolina. But just across our northern border there are thriving apple orchards in the mountains of western North Carolina. Come September when the weather starts to get just a little cooler, then you know it’s time for apple season.

There are plenty of orchards to choose from, each with delicious fresh NC apples. A couple of weeks ago we took our three little ones to visit Jeter Mountain Farm in Hendersonville, NC.

We had a wagon ride through the orchard, picked a bucket full of apples, enjoyed hot fresh apple cider donuts, hard apple cider, visited their country store and enjoyed a bluegrass band.

Since we returned from the mountains I’ve made apple tarts, apple pies, apple crisps, and apple turnovers, so its time I add these apples to something a little healthier and this salad is the perfect choice.

Yield: Serves 6

Ingredients for Salad:

10 oz. mixed salad greens 
2 cups or 4 medium apples chopped 
½ cup crumbled blue cheese 
½ cup chopped walnuts  

Vinaigrette 
1/3 cup olive oil 
¼ cup red wine vinegar 
2 tbsp sugar 
1 tsp Dijon mustard 
1 tbsp finely chopped garlic 

Instructions:

Vinaigrette 

  1. In a small bowl, whisk olive oil, red wine vinegar, sugar, Dijon mustard and garlic.

  2. Serve over apple walnut salad.

 Salad 

  1. Heat walnuts in a sauté pan over medium heat for 2-3 minutes until toasted. Set aside to cool.

  2. Add mixed greens, apples, blue cheese and toasted walnuts to a large serving bowl.

  3. Pour Vinaigrette over salad and toss.

  4. Serve immediately.
