Roasted Vegetables
Perfect for summer or fall, this recipe will please a crowd while adding a beautiful pop of color to your table.

Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
1 large red onion
2 large yellow crookneck squash
2 large zucchini
1 pint grape tomatoes
2 cloves garlic
1 cup balsamic vinaigrette
2 tbsp balsamic glaze
1 tsp salt
1 tsp pepper
Instructions:
Preheat the oven to 350 degrees F.
Chop onion, squash and zucchini into 1 inch pieces.
Mince the garlic.
Toss veggies, garlic, vinaigrette, salt and pepper and spread onto baking sheet.
Roast veggies for 20 minutes at 350 degrees F.
Remove from oven, drain excess liquid, and return to oven.
Roast another 10 minutes.
Remove from oven, transfer to a serving dish, drizzle with balsamic glaze.
