Watermelon Feta Salad
My sister-in-law Freedom was raised in the watermelon & cantaloupe fields of Allendale County, South Carolina. She comes from a long line of South Carolina farmers and she always brings the perfect side dish made with fresh fruits and vegetables found in our great state.
When we find ourselves in the dog days of summer, this Watermelon Feta Salad is the perfect refreshing dish. If the air is thick and hot and muggy with humidity, the last thing you want to do for dinner is turn on the oven and bring even more heat into the house.
So during days like these, we often have lighter meals like fresh sandwiches for dinner paired with this delicious Watermelon Feta Salad! Enjoy!

Ingredients:
4 cups cubed watermelon
1 small thinly sliced red onion
8 oz. crumbled feta cheese
balsamic glaze
¼ cup fresh mint chopped
Instructions:
Add the watermelon, sliced onion, feta and mint to a large serving bowl.
Drizzle with balsamic glaze.
Serve chilled.
