Chocolate Covered S’mores Bites

 

I’ve loved camping for as long as I can remember. As a little girl, I’d pack up my sleeping bag and hop into the tiniest camper you’ve ever seen with my Uncle Thomas, Aunt Judy, and my cousin Leanne. They’d take us to Santee State Park, and we’d spend our days playing in the woods and our nights huddled around the campfire, always ending with sticky fingers and chocolate-smeared smiles thanks to a round of s’mores.

Now, all these years later, camping has become one of the core memories I’ve made with my own three kids. Over the last eight years, we’ve spent countless weekends in the mountains of North Carolina, where the air is cool, the stars shine a little brighter, and the s’mores are always on the packing list.

Chocolate Dipped S'mores

Prep Time: 10 minutes
Cool Time: 20 minutes
Total Time: 30 minutes

Ingredients:

  • 1 sleeve graham crackers (about 8 full sheets)

  • 16 regular marshmallows

  • 1½ cups semi-sweet or milk chocolate chips

  • 1 tsp coconut oil or vegetable shortening (optional, for smoother dipping)

You will also need:

  • Parchment paper

  • Baking sheet

  • Microwave safe bowl

Instructions:

  1. Prep the Crackers:
    Break the graham crackers into squares (each full sheet should give you 2 squares). You’ll need an even number to make sandwiches—about 16 squares total for 8 s’mores bites.

  2. Assemble the Sandwiches:
    Place one marshmallow between two graham cracker squares and gently press down to sandwich them together. If you want them a little gooey, you can microwave each sandwich for about 5 seconds to slightly soften the marshmallow before pressing.

  3. Melt the Chocolate:
    Add chocolate chips (and coconut oil, if using) to a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted and smooth (usually takes about 1½ to 2 minutes total).

  4. Dip the S’mores:
    Dip each sandwich halfway into the melted chocolate, letting any excess drip off. Place on a parchment-lined baking sheet.

  5. Cool and Set:
    Let the dipped s’mores cool at room temperature until the chocolate firms up, or place them in the fridge for about 15–20 minutes for faster setting.

  6. Serve and Enjoy:
    Once the chocolate has hardened, serve immediately or store in an airtight container at room temperature for 2–3 days.
