Summer in South Carolina means hot days and the joy of blueberry season. One of our favorite family traditions is heading over to Oak Grove Farms of Gaston, a hometown gem run by dear family friends Kenny & Donna Blake. They offer the most beautiful you-pick blueberry experience, and my kids count down the days until we can go. It’s not just about the blueberries — they love seeing the goats and, of course, Big Man, the massive hog on site! Donna and Kenny always treat us like family, and it keeps us coming back!

Once we’ve filled our buckets (and maybe snuck a few bites), we always come home ready to make something special. This Easy Blueberry Cobbler is one of those recipes that proves shortcuts are more than okay — sometimes, they’re just what a busy mama needs. With just a few pantry ingredients and fresh berries, you’ve got a dessert that tastes like summer and brings everyone running to the kitchen.


Prep Time: 5 minutes
Cool Time: 45 minutes
Total Time: 50 minutes

Ingredients:

  • 4 cups fresh blueberries

  • 1/4 cup sugar (you can adjust this to taste depending on how sweet your berries are)

  • 1 box yellow cake mix (just the dry mix)

  • 1 stick (½ cup) unsalted butter, sliced into thin pats

You will also need:

  • 9x13” casserole dish

Instructions:

  1. Preheat your oven to 350°F.

  2. In a 9x13” baking dish, pour in the blueberries and sprinkle the sugar evenly over the top.

  3. Dump the dry cake mix over the berries and spread it out gently with a spoon or your hand — no stirring needed!

  4. Place the slices of butter evenly across the top of the cake mix, covering as much as possible.

  5. Bake for 40–45 minutes, or until the top is golden and the blueberries are bubbly around the edges.

  6. Let it cool slightly, then serve warm with a scoop of vanilla ice cream or whipped cream.
