Hush Puppies

If you ask me, Hush Puppies are a southern delicacy. I don't recall ever visiting a seafood shack on the coast of Carolina or even a BBQ restaurant that didn't serve hush puppies. They have been a lifelong favorite of my family.

You can serve them along side of a meal as your bread, as a savory appetizer with tartar or remoulade sauce, or even as a sweet treat with cinnamon honey butter. (yum!)

However you decide, I can promise you that with this recipe, there won't be many leftovers!

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Yield: 24 hush puppies

Ingredients:

  • 1/2 cup all-purpose flour

  • 1/2 cup yellow cornmeal

  • 1/2 tsp. salt

  • 1/4 tsp. baking soda

  • 1/2 tsp. freshly ground pepper

  • 1 large egg

  • 1/2 cup buttermilk

  • 1 cup minced onion

  • 2 cups vegetable oil

You will also need:

  • Dutch Oven or Cast Iron Skillet

  • Large Bowl

  • 2 Spoons

Instructions:

  1. In a Dutch oven or cast iron skillet bring vegetable oil up to 375 degrees F over MEDIUM heat.

  2. In a large bowl, mix all ingredients until combined to make a thick batter.

  3. Roll spoonfuls of batter off of spoon into pan using a second spoon so hush puppy forms a round shape.

  4. Fry for three minutes per side or until golden brown. (You will be frying in batches, so you do not crowd the pan.)

  5. Remove from pan and sprinkle lightly with salt.
