Oven Baked “Fried” Okra
There’s nothing more southern than a big bowl of crispy fried okra. But, sometimes I don’t feel like dragging out the frying pan and oil. This oven-baked version gives you all the crunch and flavor of classic fried okra — without the grease. It’s light, golden, and just as addictive. Perfect as a side dish or a snack straight off the sheet pan!
Prep Time: 10-15 minutes
Bake: 20-25 minutes
Total Time: 30-40 minutes
Ingredients:
1 lb fresh okra, washed and sliced in half lengthwise
2 tbsp olive oil
½ cup cornmeal
¼ cup flour (all-purpose or self-rising)
1 tsp garlic powder
1 tsp paprika
½ tsp salt
½ tsp black pepper
Optional: a pinch of cayenne for heat
You will also need:
Baking sheet
Large bowl
Medium bowl
Instructions:
Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
Prep the okra: Slice okra pods in half lengthwise. Pat dry with a paper towel so the coating sticks.
Toss with oil: Place okra in a large bowl and drizzle with olive oil, tossing until evenly coated.
Make the coating: In a separate bowl, mix cornmeal, flour, garlic powder, paprika, salt, and pepper.
Coat the okra: Add the oiled okra to the cornmeal mixture, tossing until each piece is coated.
Spread and bake: Arrange okra in a single layer on the prepared baking sheet.
Bake 20–25 minutes, flipping halfway through, until golden and crispy.
Serve hot with ranch, hot sauce, or even better Comeback Sauce!
